I always admired Madame Lily Bollinger of Reims, the most quotable queen of Champagne. She was right when she said, "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory." Totally agree. Agent 007 does, too. Every Bond from Sean Connery to Daniel Craig has insisted on Bollinger. Bolly is one of the most distinctive Champagnes; its house style warm, deep and rich, dominated by pinot and aged on lees to perfection. You can tell that in the first-tier Special Cuvee as well as the great vintages. The ultimate treat is trying their best, all in one setting. The pièce de résistance: the Grande Annee. My mind wanders a bit as my palate begins to salivate. Layers of minerality frame a wine of the most intense nuttiness where nuances of baked apple pie (including the finest crust) are evident. This is sublime liquid, perfected by bubbles. You only live twice.

Disgorged in July 2019, Bollinger's 2012 Brut La Grande Année is showing well, offering up an incipiently complex bouquet of crisp yellow orchard fruit, fresh peach, orange oil, toasted walnuts and dried apricot that's still quite reserved with less than a year on cork. Full-bodied, deep and muscular, the 2012 is blockier and broader-shouldered than its 2008 predecessor, with a weightier and even more concentrated palate built around a bright spine of acidity, concluding with a chalky finish that carries appreciably dry extract. This isn't quite as elegant as the exquisite 2008, but it is a superb effort and obviously built to age.
