This spirit is aged for two years in vats constructed of ash from Finland. The nose is reminiscent of kirsch, but is more prickly than most; the middle-stage nosing passes display plenty of round, perfumy cherry fruit; the last pass offers sublimely sweet but not overripe scents of red cherries. In the mouth, the sweet, ripe cherry taste is evident immediately and continues unabated through the midpalate. The finish is sweet, mildly syrupy and intensely cherried.

At first glance, this appears to be a sweet fruit liqueur, with a deep garnet hue and aroma that suggests currant preserves tinged with a mild sarsaparilla note. So it shocks to find an intensely bitter palate, like unsweetened chocolate, with the fruitiness showing as bitter dried orange peel around the edges. Fleeting, teasing vanilla sweetness on the midpalate quickly gives over to a bitter finish.
